Meatless Monday -- One Pot Black Beans and Rice

Thursday -- Baked Chicken and Rice (Thanks, Shonda for sharing!)
Ingredients:
2 tablespoons water
3 tablespoons ketchup
3 tablespoons brown sugar
2 tablespoons vinegar
1 tablespoon lemon juice
2 tablespoons Worcestershire sauce
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon chili powder
12 chicken thighs, skin removed
Directions:

Preheat the oven to 500 degrees. In a small saucepan, over medium heat,
stir together the water, ketchup, brown sugar, vinegar, lemon juice and
Worcestershire sauce. Season with salt, mustard powder and chili
powder. Simmer the sauce for 15 minutes.
2. Place the chicken thighs into a baking dish and pour the sauce over them. Cover tightly.

Bake for 15 minutes in the preheated oven, then reduce the temperature
to 300 degrees and bake for one hour. Remove cover, stir and bake
uncovered for 15 minutes.
Friday -- leftovers
Saturday -- Easy Cashew Chicken with Coconut Rice (I really want to try this, but am slightly nervous about it...let's see if I still have the courage come Saturday).
Sunday -- leftovers
The cashew chicken sounds good! My daughter can't eat soy so I tend to avoid cooking Chinese/ Thai food, etc--- I totally know what you mean about being nervous to try out a new recipe-- I often have new recipes on my menu for a few weeks before I finally make them. It's so funny isn't it? Being afraid of food? My little secret is that my kids are actually more brave than I am- I'm planning a "confessional" post about this :)
